Assistant Restaurant Manager






Department: Food & Beverage

Reports to: Restaurant Manager                                                                  

Job Summary:

Entry level management position that focuses on supporting the day to day activities in Restaurant outlets, and Bar/Lounge.  Position supervises daily restaurant operations; assists with menu planning, maintains sanitation standards, assists servers and hosts on the floor during peak meal periods; and supervises Bar/Lounge departments where applicable.  Position assists in ensuring guest and associate satisfaction is achieved while maintaining the operating budget.

Overall responsibilities:

The Restaurant assistant manager is responsible for supervising the Restaurant team by actively perform training, coaching, guiding, controlling and hand on assistance where and when required.

Education or Certification

  • High School Diploma or equivalent required; Bachelor’s Degree preferred
  • Hospitality Management Degree beneficial
  • Certifications as required to comply with local, state and health codes, i.e., food safety and alcohol awareness
  • Empowers associates to provide excellent customer service within guidelines.
  • Observes service behaviors of associates and provides feedback to individuals; continuously strives to improve service performance.
  • Assists in the review of comment cards and guest satisfaction results with associates.
  • Communicates to Chef and Restaurant Manager any issues regarding food quality and service levels.
  • Poseer el “Carnet de Manipulador de Alimentos”.

Human Resources

  • Participates as needed in the interviewing and hiring of restaurant associate team members with the appropriate skills.
  • Uses all available on the job training tools for associates; supervises on-going training initiatives and conducts training when appropriate.
  • Trains associates on responsible beverage service
  • Communicates performance expectations in accordance with job descriptions for each position and monitors progress.
  • Participates in the associate performance appraisal process, giving feedback as needed.
  • Coaches and counsels associates regarding performance on an on-going basis.  Handles associate progressive disciplinary procedures as required.
  • Handles associate questions and concerns.
  • Participates in department meetings and continually communicates a clear and consistent message regarding the departmental goals to produce desired results.
  • Participates in an on-going associate recognition program.

Sales and Revenue Management

  • Supports and assists with new concepts and promotions for the Restaurant outlets and Room Service.
  • Supervises associate incentive programs for up selling and marketing promotions.
  • Participates in weekly sales strategy forecast meeting to anticipate service and staffing needs. 
  • Monitors actual and projected sales on a daily basis.  Reviews meal period covers, room capture ratios and average check to ensure revenue goals are met or exceeded.  Identifies and addresses opportunities as needed.
  • Provides feedback on menu sales trends to Restaurant Manager and Chef.

Financial Management

  • Comprehends budgets, operating statements and payroll progress reports as needed to assist in the financial management of department.
  • Utilizes the Labor Management System to effectively schedule to business demands and for tracking of associate time and attendance.  Manages payroll administration.
  • Participates in the management of department's controllable expenses to achieve or exceed budgeted goals.
  • Understands the impact of department’s operation on the overall hotel financial goals objectives and manages to achieve or exceed budgeted goals.

Other

  • Performs other duties as assigned to meet business needs.

Functions & duties:

  • Interacts with guests to obtain feedback on product quality and service levels.
  • Supervises staffing levels to ensure that guest service, operational needs and financial objectives are met.
  • Ensures all associates have proper supplies, equipment and uniforms.
  • Empowers associates to provide excellent customer service within guidelines.
  • Handles associate questions and concerns.
  • Handles guest problems and complaints, seeking assistance from supervisor as necessary.
  • Monitors associates to ensure performance expectations are met.
  • Provides feedback to associates based on observation of service behaviors.
  • Strives to improve service performance.
  • Sets a positive example for guest relations.
  • Assists in the review of comment cards and guest satisfaction results with associates.
  • Supervises daily shift operations.
  • Supervises restaurant and all related areas in the absence of the Director of Restaurants or Restaurant Manager.
  • Communicates to Chef and Restaurant Manager any issues regarding food quality and service levels.
  • Meets and greets guests.
  • Participates in department meetings by communicating a clear and consistent message regarding the departmental goals to produce desired results.
  • Ensures compliance with all restaurant policies, standards and procedures.
  • Monitors alcohol beverage service in compliance with local laws.
  • Manages to achieve or exceed budgeted goals.
  • Supervises on-going training initiatives.
  • Performs all duties of restaurant associates and related departments as necessary.

Tools & Equipment:

  • Items include but are not limited to: CO2 systems, keg tap system, blender, sound system, wine opener, credit card machine, computer system, telephone, point-of-sale system, copy

Communication

Communicate effectively with manager (to ensure consistency in management style and avoid associate confusion), as well as with other departments and colleagues. Schedule and attend monthly departmental meetings and conduct in absence of manager – take minutes Ensure sufficient communication at shift change to attain proper follow up and consistent service Read communication logbook and initial when read Check room forecast and daily events for proper scheduling and mis- and place. Record all guest complains in logbook or guest response form for follow up of manager Attend weekly communication  meeting in absence of manager Follow lost and found procedures and delegate to associates Responsible to supervise other special assignments as assigned by manager In case of guest complain use the P.L.E.A.S.E.D. process to do everything in your response procedure to ensure that the guest is delighted.

Computer systems

Micros; Know all micros procedures. Daily shift closings Understand and able to perform on different Marriott computer systems and programs (outlook, words, excel,  etc.)

  • The Assistant Restaurant manager  has to perform other duties as required

In addition to these functions, he/ she is expected to:

- Provide warm and friendly service at all times

- Practice safety standards at all times

- Understand the Guest Response procedures and report all complaints to AYS

- Attend department meetings

- Inform your manager if issues exist that you can’t solve

- Adhere to the time set for meal breaks

- Be able to work all shifts, weekends and holidays

- Adhere to all Hotel policies and internal procedures

- Present a professional appearance at all times and comply with all grooming and uniform

  standards

- Attend and participate at 15 Minutes pre-Shift Meetings every day

- Develop and maintain positive communication skills with peers, managers and all other

  departments in the hotel

- Be flexible to assist other departments when needed with authorization from your manager

- Carry out all reasonable requests by management which he/she is capable of performing

- Other duties as required

All associates must realize this fact and be aware that at times it may be necessary to move you from your accustomed shift and/or rotate you over different departments and properties as business demands.
